No Bake Nut Free Chocolate Chip Cherry Granola Bars

Well we are almost through our first year of school and I admit I’m looking forward to a couple of months of not having to send a snack with my kid to school. I know snacks aren’t that hard but ours have to be – healthy, litter free, nut free and it can only be one of something. Yes one. For example I can send her say 6 slices of apples but I cannot send her 3 slices of apples and 3 pieces of cheese. Don’t get me started on how ridiculous I think that rule is. Because I know that the apples and cheese are going to keep her going much longer than the apples alone. So in order to comply with this odd rule I have to come up with “single” items that have a good balance of nutrition and will help fuel a very active 6 year old until lunch time. She’s a fruit lover so I try to incorporate whatever happens to be in season into her snacks. Right now cherry’s happen to be in season. Juicy, red cherry’s. One of my favourites. So last night I whipped up these slightly sweet, soft, chewy granola bars with cherry’s and chocolate chips. If you don’t have fresh cherries you can easily substitute them with a dried fruit like cranberries or raisins.

Serves: 10-12 bars
 
Ingredients
  • 2 cups of quick oats
  • ¾ cup of crunchy cereal - I used Life cereal but you could use Cheerios or Rice Krispies, etc.
  • ¼ cup of shredded unsweetened coconut
  • ½ cup of chocolate chips
  • ¼ cup of coconut oil OR butter
  • ⅓ cup of honey
  • ¼ cup of brown sugar
  • ½ tsp of vanilla
  • ¼ tsp of coarse salt
  • ¾ cup of fresh cherries cut (I cut each into about 8 pieces) OR dried fruit
Instructions
  1. Place the oats, cereal, coconut and chocolate chips in a medium size bowl and mix the ingredients together.
  2. Place a saucepan over medium heat and melt the coconut oil or butter.
  3. Add the honey, and brown sugar. Cook ever medium heat, stirring often, until the mixture comes to a boil.
  4. Turn to low and cook for another 4 minutes, continuing to stir.
  5. Remove from heat and stir in the salt, vanilla and the cherries.
  6. Pour the mixture over the dry ingredients in the bowl.
  7. Mix well.
  8. Spoon the mixture into a 8 or 9 inch square pan that has been lined with parchment paper or foil. If using foil spray lightly with cooking spray.
  9. Press the mixture very firmly into the pan. I like to use the bottom of my glass measuring cup to do this.
  10. Place in the fridge for at least two hours before cutting into bars.
