Beef Ravioli With Brown Butter Sauce

Last week I shared with you my new favorite recipe for ravioli pasta. We’ve been having fun playing with different fillings. There are so many ways you can fill ravioli – meat, cheese, spinach,  and one of my favourites – lobster. The possibilities are almost endless. This classic beef filling is generally one that your whole family will love. You can go ahead and top it with a marinara sauce, kids tend to like that, or changes things up a bit with a simple but so delicious easy brown butter sauce.

Ingredients
  • 1 batch of pasta dough (see link above)
  • ¾ pound of ground beef
  • 2 tablespoons of chopped onions or dried onion flakes
  • ¾ tsp. salt
  • ¼ tsp.ground pepper
  • ½ cup dry red wine (optional)
  • 2 eggs, beaten
  • ½ cup grated Parmesan cheese, plus more for serving
  • ¼ cup fine dried bread crumbs
  • ½ cup of butter
  • 1 tablespoon of salt (for cooking ravioli)
Instructions
  1. Place the ground beef, onion, salt and pepper in a fry pan over medium heat.
  2. Cook, stirring and breaking up any chunks in the meat until the meat is no longer pink but not browned.
  3. If you are adding wine do it now and bring the mixture to a simmer and cook until the wine evaporates.
  4. Remove from heat.
  5. Place the meat mixture into a food processor and pulse until chopped.
  6. Add the Parmesan, eggs and bread crumbs.
  7. Pulse until well blended.
  8. Chill in the fridge while you prepare your pasta dough.
  9. Roll your dough out either by hand or according to the instructions with your pasta roller. You want to roll it to about 1/16 inch thick.
  10. Your next steps really depend on how you are making your pasta. You may be using a ravioli maker, a ravioli cutter or doing with a knife. If you are using a device refer to the instructions for that device.
  11. If you don't have a specific ravioli maker you can use these steps:
  12. Cut two sheets of pasta that are about 12 inches long and 2½ inches wide.
  13. Place about 2 teaspoons of filling every 2½ inches in the centre of one strip of pasta.
  14. Dip your finger in water and gently rub your finger around each mound of filling to moisten the pasta so the top sheet with stick.
  15. Place the second sheet of pasta over the first.
  16. Starting in the centre, gently press the top dough to the bottom dough around each mound of filling.
  17. Use a sharp knife to cut into squares, or you can use a small round cookie cutter if you prefer round ravioli.
  18. To prepare the Brown Butter Sauce place the butter in a heavy pan over medium heat.
  19. Cook and stir until butter is melted.
  20. Cook for an additional 5 to 8 minutes or until butter is lightly browned, stirring occasionally and skimming foam as necessary. Watch carefully as it will brown quickly!!
  21. Remove from heat.
  22. To cook the ravioli bring a pot of water to a boil.
  23. Add the 1 tablespoon of salt and as much ravioli as your pot will fit.
  24. Cook until the ravioli float and the pasta is el dente (usually about 3-4 minutes).
  25. Drain and divide onto serving plates.
  26. Drizzle with the brown butter sauce and sprinkle with Parmesan cheese.
