Well here we are smack in the middle of August. It seems like it was just yesterday I was picking my daughter up from her last day of grade two. And then I blinked and the summer was more than half over. I admit I tried to deny it for a while, telling myself we have lots of time before it’s time to get back on that bus and head into grade three. But all my wishful thinking doesn’t make it so! Thankfully my daughter is actually excited to get back to school! We went out last week and picked up most of the things on her school supply list. We’ve gone shoe shopping (man their feet grow fast) and are starting to look at new back to school outfits. It’s coming so I might as well embrace it.
As busy as summer seems, fall, and back to school season is actually busier. Between work, and school, and homework, and all of the fall activities (like dance and sports) the days and evenings fill up fast. It can be hard to fit it all in. It can also be hard to do all the things we need to do to stay healthy. Things like getting enough sleep, watching stress levels and eating a healthy, balanced diet. And eating healthy can be a challenge when you’re busy. But if you plan ahead, and keep the right ingredients on hand it doesn’t have to be a big chore.
Whether you are planning a nutritious breakfast to start the day right, a protein packed lunch to keep going, or a delicious family dinner at the end of the day, Canadian Turkey is one ingredient that you should have on hand. Turkey packs a big punch with each 100 gram serving providing 30 grams of quality lean protein. It’s also packed with nutrients like vitamin B12, selenium and zinc. And it’s so versatile that you can easily fit it into meals (or snacks) any time of day. Of course it also tastes great too and that’s pretty important when you’re dealing with picky eaters, and I think we all know at least one of those.
So, as amazing as that looks, a busy school night might not allow you to prepare this amazing BBQ turkey. You might want to save that for the weekend. But, there are plenty of quick and easy turkey recipes that you can fit in to your week night meals. Like these Quick & Tasty Lemon Rosemary Turkey Tenders. They only take 15 minutes to prepare and and another 20 to cook so you can have a healthy delicious meal on the table in no time!
- 3 lbs. Canadian turkey tenders OR 3 lbs. Canadian turkey breast, sliced into tenders
- Salt and pepper to taste
- 1 tsp. olive oil
- 2 tbsp. honey
- ½ lemon, squeezed
- 3 tbsp. rosemary, chopped
- ½ c. olive oil
- Combine all ingredients to make the marinade.
- Season the turkey with salt and pepper to taste.
- Combine tenders and marinade in a glass container.
- Marinate for a minimum of 2 hours. At this point, you can store in the fridge up to 2 days or freeze up to 1 month. If using from frozen, defrost and then follow cooking directions.
- To cook, heat a non-stick frying pan or skillet to medium heat.
- Cook the tenders for 6-8 minutes per side, until lightly browned and cooked through. Cooking time will depend on the thickness of your cuts, so use a meat thermometer inserted into the thickest part of the meat to check for doneness, 165°F (74°C).
- Serve immediately.
Combine ½ c. peanut butter, 2 tbsp. sesame oil, 1 tbsp. thai chili, 2 tbsp. green onion, 2 tbsp. apple cider vinegar
Orange Pepper Lime
1/3 c. orange juice, 1 tbsp. pepper, 1 tbsp. vegetable oil, 2 tbps. garlic, 2 tbsp. lime
Sun-Dried Tomato and Herb
3 tbsp. sun-dried tomatoes, 2 tbsp. olive oil, 2 tbsp. balsamic vinegar, 2 tbps. white wine
